Pre-Christmas Bird roasting

Thank God for Christmas which brings about our redemption in Christ Jesus,and in return we ought to give back love to everyone far or near,young or old without colour coming in to play,so open up your Godly mind and spread love this Christmas and always.

Christmas is not complete without some kind of bird either Turkey,Chicken,Duck,Goose and the likes of it so I decided to get the ball rolling prior to the Big-day with vegetable stuffed roasted chicken.

Ingredients:

Whole Bird(Chicken)

Celery

Carrot

Brussel Sprout

Onions(sliced)

Radish

Mixed spice

Paprika

Curry

Turmeric

Chilli flakes

Ground Ginger

Garlic Fresh or dried

Cardamom Pods

Salt

Method:

Wash the bird and dry with a paper towel,slit the bird all around and the breast area to allow the spice entry into the meat and up-to the bone because to me everything is edible both meat and bone:) combine all the spices i.e salt,garlic,ginger,chilli flakes,turmeric,curry,paprika,mixed spice,coat the bird inside out then throw in half of the sliced carrot,brussels sprouts,radish,onions and tuck in the celery.  Finally lay the remaining vegetables for the bird to lie on ready for the oven .Grill the chicken about 30mins before turning it over , leave for another 25 mins and its all done.
